An idea stuck, and when I get an idea, I’d better act on it before it is gone! This idea turned out fabulously! This recipe is
slightly looser than traditional Fool Proof Fudge, so don’t worry if it doesn’t look the same. It will still cut well. I’m giving this fudge out this year in gift tins. But if you have a last minute holiday party this would would be a great recipe to put together in a hurry!
Fool Proof Fudge v2.0
Ingredients:
- 1 cup of semisweet chocolate chips
- 1 cup white chocolate chips
- 1 can (minus 3 tablespoons) sweetened condensed milk divided
- 1/8 tsp salt (a pinch)
- 1 tsp vanilla extract
- 1/4 – 1/2 tsp peppermint extract (suit to taste)
- 4 crushed candy canes
Directions:
Line an 8×8 baking dish with parchment paper and crush some candy canes and set aside. In a small sauce pan combine 1/2 sweetened condensed milk, chocolate and salt. Heat over low heat until melted, stirring constantly. Remove from heat, add vanilla and stir well. Pour into the baking pan and spread to the edges (it may not make it all the way to the edges – that’s ok!). Set aside.
In another small sauce pan combine the second half of the sweetened condensed milk, white chocolate chips. Heat over low heat until melted, stirring constantly. Remove from heat, add the peppermint extract and stir well, then mix in the crushed peppermint. Spread over the layer of chocolate fudge. Cover and refrigerate until set. Then cut into 1 inch squares and serve.
