The Almond Cookie – Revisited

I had to revisit the almond cookie, I had a certain store bought cookie and thought “hey! I can make this!” So I did. And they turned out pretty darn good!

Ingredients

  • 1 cup butter
  • 1/2 cup white sugar
  • 1 egg
  • 2 teaspoons almond extract
  • 2 1/2 cups sifted all-purpose flour
  • 1/2 cup crushed almonds
  • 1/3 cup chopped dark chocolate chips
  • granulated sugar for decoration * optional

Directions

  1. In a large bowl, beat butter with 1/2 cup sugar and almond extract until light and fluffy. Beat in the egg. Then mix in the flour then add crushed almonds and chocolate stir till just combined.
  2. Refrigerate dough for at least an hour
  3. Preheat oven 300 degrees F (150 degrees C).
  4. Roll a scant tablespoon of dough between your hands to form a ball, then flatten and place on a parchment lined cookie sheet
  5. Bake 10-12 minutes until just slightly golden brown, cool on a wire rack
*I froze some of the dough for a rainy day, and while it didn’t rain today, I did finish up baking the rest, and I think in hind site, instead of mixing the chocolate in the dough, I Think maybe rolling a few chunks of chocolate into each cookie would be nice. Something to try next time.

I have to make these. Yum. Dang, I don’t have almonds, almond extract or dark chocolate chips. Have to get some. Quick question. What’s the best way to crush almonds?

I usually put the almonds in the ziplock bag and bash them with a frying pan or rolling pin! These are really yummy!!!!

I guess I should point out I buy the sliced almonds then crush those – if you get whole almonds chopping would be the way to go!
