Still Feeling Pepperminty… Recipe Review

I was stumbling on my computer on the Eve of 2012, wishing that Christmas and all the Pepperminty goodness that goes along with Christmas wasn’t over. When it dawned me, It doesn’t have to be Christmas to enjoy peppermint! Talk about a revelation.

I had bookmarked these Peppermint Patties earlier in December, but never got around to try it out. I naturally didn’t have all the ingredients on hand. so I skipped the corn syrup, and added slightly more water, maybe 1/2 teaspoon more. And I used 1 tablespoon of butter instead of shortening. Since I don’t expect these to see the light of day I am not that worried about the shelf life, but if I make these as gifts, I will use the shortening. You are looking for something the consistence of play dough, so adjust your water accordingly.

Also, I detest rolling and cutting anything, candy is no exception. So I rolled the dough into small balls then flattened with the bottom of a cup.

This recipe is certainly a win!
