The hubs and I recently relocated south of the Mason-Dixon and a quest for decent Chinese food was born. This evening the craving struck us both, so I quickly found a number and dialed up our dinner. Along with all our usual stuff, we got white rice. Now the Chinese food wasn’t stellar by any stretch, but it did calm the craving. The question now was “what do I do with all this rice!?”
I figured, I got this – I conquered custard a while ago – I’ll make pudding!
Here is what you need:
- 2.5 cups milk

- 1 egg yolk
- 2 cups precooked rice
- 3/4 cup sugar
- 2 tbls cocoa powder
- 2 tsp corn starch
- pinch of salt
- 1 tsp vanilla
In a medium pot I mixed the egg yolk and milk together, then I added the rice, sugar, cocoa powder, salt and corn starch. Mixed it all up and cranked on the heat. I cooked it over medium heat stirring occasionally until it started to boil. Then I turned it down and let it gently boil while stirring constantly for about 10-15 minutes, but I was basically going off of “what looked right”. Then I took it off the heat and stirred in the vanilla, the put it in a bowl and stuck it in the fridge. Once it had cooled, it looked a little more firm than I wanted, so I added a splash of milk and mixed it in.
So the quest for decent Chinese food continues, but I know that I’ll be able to make some wicked-awesome pudding with whatever mediocre Chinese white rice that may come along!
